Spicy Low & Slow Chicken Wings

Football season is upon us!  Baseball is winding down towards playoffs. Time for that perfect game day appetizer!

Of course you can run to your local wing joint and grab a few dozen or pull out that trusty (almost never used) fryer and give it a go... OR try this fairly simple recipe on your smoker and Impress Your Friends and Family!

This Low and Slow Chicken Wing recipe is super simple to pull off. Just a little bit of planning ahead time, but other than that it's pretty straight forward. Instead of cooking the wings in a blazing hot oven or deep fryer, this recipe requires a low and slow smoke that results in wings that literally fall off the bone.

You can sauce them at the end of the smoke but they are pretty good just the way they are.

INGREDIENTS

6 pounds chicken wings
2 tablespoon kosher salt
2 tablespoon black pepper
2 tablespoon Spice Cave Fire Rub (Substitute chili powder)
2 tablespoon smoked paprika (Substitute paprika)
2 teaspoon ground cumin
2 teaspoon garlic powder
Blue cheese, ranch for dipping

PREPARATION

  • The rub used for this recipe is really basic but pretty spicy.  You can adjust the amount of Spice Cave Fire or chili powder to your liking.  NOTE:  This may look like a lot of rub but you will want to use a heavy application to allow the flavors to fully bake into the wings. Some of it will fall off during the smoke.

  • Get your smoker going and heat to 250F. For this dish, we prefer Cherry or Mesquite pellets.
  • Combine all of the dry ingredients listed into a small bowl. Mix thoroughly.
  • Roll each wing in the rub until thoroughly coated.  Roll front, back and all sides.

  • Place each wing onto a PhatMat Grill Mesh for smoking.  You can simply place a Grill Mesh in a baking sheet for easy transport to your smoker.

SMOKE
*******************************************************************************************************

  • Smoke at 250F until internal temperature hits 165F.  This will be about 4 hours but you should use your temperature probe to test the thickest pieces.Larger chicken wings may take a bit longer and smaller pieces may take a bit less time.
  • No need to rotate or turn over as the PhatMat Grill Mesh allows full smoke flavor on all parts of your wings.

  • You can easily remove your cooked wings by simple pulling on a Grillin Chill Gear BBQ glove and safely pull the edge of the Grill Mesh back onto your baking sheet. Easy peasy!

  • Serve the Spicy Low & Slow Chicken Wings with blue cheese, ranch or a splash of your favor hot sauce or just serve them as is!
